Yummy! Cookie Dough Truffles

it's wednesday, and if your week is dragging I've got the recipe to pick you right up! plus it so easy! I discovered this Yummy Treat on Pinterest early this month and I have already made these a few times, my hubby LOVES them! so whats the treat? Cookie Dough Truffles!!! I got the recipe from Love & Olive Oil but I left out a step or two so I could eat it sooner lol. so here's the original recipe...

Chocolate Chip Cookie Dough Truffles
Yield: 3-4 dozen Prep Time: 1 hour Total Time: 2 1/2 hours
Ingredients:
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup (2 sticks) butter or margarine, room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1/3 cup milk or soy milk
  • 1 cup mini semi-sweet chocolate chips
  • 14 oz dark chocolate candy coating
Directions:
Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add soymilk and vanilla. Stir in flour, baking soda and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips.
Cover and chill dough for 1 hour.
When dough is firm enough to handle (it may help to lightly flour your hands), form dough into 1" balls and arrange on a baking sheet lined with waxed paper. Place sheets in freezer and let chill for 30 minutes.
Melt chocolate candy coating in a double boiler or in microwave according to package directions. Using forks or a dipping tool, dip cookie balls into candy coating to cover. Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets. Chill until set. Store, chilled, in an airtight container for up to 1 week (though good luck making them last that long).

and here's what I changed/ left out...so I mixed it up like it says but I used just 2% milk. then I may have taken a few spoonfuls out to eat, then I chilled it. once it was chilled I rolled the balls and then rather than going through melting the chocolate, I just crushed up the leftover chips and rolled the balls in the chocolate crumb and popped them in to a container and stuck them back in the fridge to sneak a treat every few mins lol. I’m telling you these are so good!, now on my second batch I didn't do any outer coating and just froze them in a jar. BUT if I were making these to take to any occasion I would coat them in the melted chocolate and make them look cute. so there you have it, I hope you enjoyd reading, and I inspired you to get in you kitchen this week and make something to treat your self!

I Found this kit rolling through my FaceBook page and instantly had to check it out, I love all the flowers and the colors in this kit, and I think my soft spot is the little wedding couple, it almost looks like the little one from my tiny cake. so I suggest you check it out too!

New Release 8/26! Charity Car Wash!

good morning! I hope your week went smoothly if your in the back to school routine, or I hope you had an awesome week if school hasn't stated for you yet. Gage's school technically starts on Monday, but this last week he was in kindercamp which was only 2 hours long just to get him used to how kindergarten works and get to know his teacher a little bit. OH! and we took him to the dentist this week, he's got his first loose tooth! oh my goodness kids really grow up way to fast, it makes me want to have more babies!
alright lets get down to business lol new release this morning and it's a charity kit! a few months ago while sitting in church during the little announcements, they told us they are working on setting up the basement of the coffee house (which is run by the church) renovating it, for the teens, well anyone who wanted to hang out there, to make it a fun place for the kids to hang out, meet, have some fun and stay out of trouble in a faith friendly environment. being a church they are asking for some help in any area that anyone could provide. This got me thinking while i plan on volunteering my time, I also thought about the gifts and opportunity that has been giving to me, I could make and sell a kit with all proceeds going to this project...

it's iconic to see kids standing by the side of the road with big signs yelling "Car Wash!" it's good to see kids pitching in and helping out for good causes, this cute kit by Pretty in Green does just that with out getting all wet, all the proceeds from this kit will go towards helping out the youth program at her local church, they are renovating an area for teens to hang out and stay out of trouble. this kit is great for scrapping those cute helpful kids and helps kids at the same time, how can you go wrong!

Yummy Treats! Funnel Cakes

 It's Wednesday, the week is almost over! Today I've got a tested and approved Yummy Treat for you today! it's close to fair time well around here it's been fair time all month long. I don't know about your fairs but the fairs around here can really empty your pockets, so for today I want to share with you a treat that will maybe help you not want this tasty fair treat once you head to the fair and then you can spend your money else where... or just make this yummy treat just because you wanna, these would even be great for parties. so what is the Yummy Treat for today..... Mini Funnel Cakes! YUM! I made these a few weeks ago, and the kids and I couldn't get enough! Taylor Takes a Taste is the blog where I got the recipe from, I'm going to post her photos because, well mine just didn't come out looking so cute, but still tasted super good! just a note from me, this still makes quite a bit of batter so expect at least 5-6 slightly bigger cakes i just used a small pan with out the cookie cutter, so in my house this was a bit much for me and the 2 kidos, but by the time we went to the fair there was no craving for funnel cakes :)

Mini Funnel Cakes
Makes about 15-20 4in diameter cakes (will vary depending on how much batter used in each cake)

Dry ingredients
1 1/2 cups AP Flour
1 tsp baking powder
1/4 tsp salt
1/4 cup powdered sugar

Wet ingredients
1 1/3 cup milk
1/4 tsp lemon zest
1/2 tsp vanilla extract
1 egg

Sift the dry ingredients into a large container that you can easily pour from (like a plastic pitcher). In a separate bowl, beat the egg with the rest of the wet ingredients. Pour wet ingredients into the dry and stir until a thick batter forms. Using a funnel, pour batter into a squeeze bottle. The batter is thick so be patient for it to flow into the bottle. You may also pour the batter directly from the pitcher into the plastic squeeze bottle.

In a large pan, pour in your favorite frying oil until it is about 1/2 inch deep, and heat to 350F (I used peanut oil). Place metal 4in metal rings into pan. Depending on the size of the pan, you can fit 1-4 ring. Squeeze batter into ring and cook until ring is solid (30 seconds-1min). Using tongs, remove metal ring and let cakes float. Flip and cook the other side for 30 seconds to a minute or until a nice light golden brown. These cook very quickly so be careful not to burn. Try experimenting with your first few to find a cooking time that works best for your oil and pan set up.

Once golden brown, remove from pan and place onto brown paper bags to let the excess oil drain. Immediately top with powdered sugar. Best if eaten when still warm right after frying.

Kit Flashback: Paper Ana

oops i almost forgot to post today! today is Gage's fist day of kindergarten well really it's kindercamp this week to get him used to how things work in kindergarten, so we're all up early getting ready to head to school, but of course i had to pop on my computer when i remembered i had to post! lol so this week i'm flashing you back way back to last year i released this cute little mini "Paper Ana" i think this is still one of my favorite kits because it's just so cute and beautiful, i love all the pretty patterns i used in this kit, and the paper doll can be classic or modern depending on which dress you put her in.

Kit Discovery 1

 Roaming around digiland this weekend I stumbled across this kit, Princess Party by Mle Card at Scrap Orchard, my Ana is in love with princesses I could see using this kit a thousand times for her, I just love the look of the doodles and the soft colors, but I especially love that one of the princesses has red hair. I'll be adding this to my wish list!

Another Kit Discovery I'd like the share with you is one I have actually had the chance to play with. Jungle Jim and Jungle Jane bundle by Jen Yurko, Jen was a Guest at Ginger Scraps, and I picked up this kit after seeing a few layouts from the store CT, this kit is so fun, I just love the colors, the super cute animals, and the prints!

Sneak Peek!

hey all, here's a Sneak Peek at my latest collab that will be releasing this Wednesday 8/17! it was an awesome experience working with Kathy Winters, I couldn't of pulled off this kit with out her! it really came together beautifully. what happened!

lol so I said I would be posting more and here I am, it's Friday and I haven't even posted yet. well I have good reasons I suppose. This week's new releases are postponed until Wednesday 8/17 because Ginger Scraps is doing a server upgrade to get ready for Survivor!!! yep! I hope you sign up, it's super fun and it's a great prize package! if you didn’t know or forgot I won last year, and I have to say I still love the layouts I made from last year the most out of all my layouts! so I’ll be posting a freebie along with the new releases this Wednesday so I hope you pop back here.
as for why I didn't post all week, well I have a good excuse for that as well, I went camping with the family! we had a wonderful time! the kids really loved it! DH will tell you it wasn't that good, but i keep telling him if we had stayed home the kids would have gotten on his nerves just the same lol. any ways here’s some pics
we went to Cooksburg Pa at Cook Forest, Day one: so that is our camp site we could see the river, we set up our tent and then headed to the deer ranch, that was cool, we got to pet the deers that came close, if you've never felt a deers soft antler, its really soft like a bunny, lol, one of the deers licked my hand i was pretty excited. then it started to poor rain i mean really poor so we went to their indoor area that had mount of some animals and after that we went next door to a indoor glow in the dark putt putt gulf.
day 2 well it rained all night the kids did okay their first night in the tent but woke us up at like 6:30 am and we all had to pee so we figured we'd all pile in the truck go to the bathroom and then drive around and find breakfast, finally the sun came out at like 10am so we headed down to the river and got a canoe. the river was super low we kept running in to the rocks and ana screamed and cried the entire 2.5 hours down the river, yep super fun. lol. after that we got ice cream and that made her happy. then we headed to the forest and saw senccea point and the fire tower. i got some cute shots.
day 2/3 we got back from the park and hung out at the campsite, here's gage trying to rub two sticks to start our fire lol, i'm so glad i took the DSes because they kept our insanity, when the kids just wouldn’t stop i handed them their games and we could relax. we saw a few fun gift shops i got a the kids some tee's and i got a sign for in the house " a fisherman lives here with the best catch of his life" it cute.
day3 we headed to clear creek park area for a place called farmers inn they had a petting zoo and restaurant so we spent the day there then went down to the river to swim or walk lol the kids loved that they were sitting in the river throwing rocks and i took some shots of the river and of them playing and then we headed to the tent had some dinner then i wanted some shots of the river during sunset well the river turned the wrong way so it wasn’t as pretty as i wanted but the shots i got look good i think.
this morning day 4 we tried to go to some flea market and DH got lost and just kept going lol so we didnt get to see anything for the last time so we got home fairly early and ended up eating breakfast in our town lol.
